I’ve been trying to cook more, to take the pressure off of Matt and to have more control over what I’m eating (Matt is an awesome cook, but I’m in the middle of trying to lose a bit of newlywed weight right now and it’s hard to accurately track dinners when I’m not 100% sure what is going into them!). I think I’ve had a few good meals turn out!
Left from top: Spaghetti Limone Parmeggiano with turkey meatballs (I still pledge my love to Bittman); balsamic strawberries with arugula and goat cheese (Bittman!), blueberry oatmeal muffins (I added walnuts).
Middle: This isn’t a fancy recipe — but I discovered ricotta on scrambled eggs is amazing!
Right: Not only did I make broccoli soup, I ate it (from a sourdough bread bowl). This is notable because I used to hate broccoli. I used real cheese instead of Velveeta because ew.
Other recipes of note: this spicy chicken shawarma was quite tasty (though not real shawarma, I know). These nut/chocolate chunk cookies went flat and crunchy on me but they’re still delicious.
You may notice a lot of the recipes are from Cooking Light; I find it easy to eat healthier using their stuff although I do try to find recipes that don’t involve a lot of weird, overly-processed ‘diet’ ingredients.
Now to figure out what to cook this week!






















These look so yummy and I really need to try them! I always find myself in a cooking rut, because it’s not my favorite thing to do, but it is fun trying new recipes!
Yeah, right now I’m stuck trying to put stuff together with pantry and freezer items and it’s a bit less fun.
But I am enjoying being in the kitchen more often!
Okay, first of all, if your mother sees you badmouthing Velveeta, you might not get any more Christmas/Birthday presents. Just warning you.
Or, she’ll only send you Velveeta in bulk.
Secondly, whenever I think of Bittman, I shake my fist to the sky. I think Anthony Bourdain did it in one episode of No Reservations or something, and I just can’t help but react that way every time.
The Velveeta slices, maaaybe. But the weird hunks of mass Velveeta pseudo-cheese? That’s wrong.
I love Bittman! So many things I make come from the How to Cook Everything and How to Cook Everything Vegetarian app. Although I wish there were calorie counts with it.
